Italian Vegetable Pasta Bake

Looking for a way to use up all those farmer's market vegetables? This Italian vegetable pasta bake is a great dish that is full of fresh veggies. Change things up and use whatever vegetables you have on hand.

Ingredients

  • 3 cup mostaccioli or penne pasta, cooked and drained
  • 27 1/2 ounce meatless pasta sauce
  • 8 ounce shredded mozzarella cheese, divided
  • 2 cup sliced mushrooms
  • 2 cup thin yellow squash slices, halved
  • 2 cup zucchini slices, halved
  • 1/2 cup grated Parmesan cheese, divided

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Cook pasta according to package instructions.
     
  3. Fill a 13x9"  greased baking dish with all of the pasta.
     
  4. Mix pasta sauce, 1 cup mozzarella, vegetables and 1/4 cup Parmesan. Spoon into 13x9" baking dish.
     
  5. Top with remaining mozzarella and remaining 1/4 cup Parmesan. Bake at 350 degrees F for 25 min. or until heated through.
