Pasta Primavera
Ingredients
- 16 ounces linguine
- olive oil flavored vegetable cooking spray
- 1 teaspoon minced garlic
- 2 cups broccoli florets
- 1 cup sliced zucchini
- 1/2 cup sliced yellow pepper
- 1/2 cup sliced red pepper
- 1/2 cup carrots, sliced lengthwise
- 3/4 cup fat-free chicken broth
- 1 teaspoon Italian seasoning
- 3/4 cup freshly grated fat-free Parmesan cheese
- freshly ground black pepper
Instructions
Cook linguine according to package directions. Drain well. Spray noodles with cooking spray and gently toss to coat noodles. While noodles cook, spray non-stick skillet with cooking spray. Combine garlic, broccoli, zucchini, peppers and carrots and pour into skillet. Add chicken broth, 1/4 cup at a time. Stir in Italian seasoning. Cook over medium heat, stirring constantly, until vegetables become tender, about 4 to 5 minutes. Add more broth as needed to keep vegetables moist. Combine hot pasta with vegetables. Gently toss. Top with Parmesan cheese and black pepper. Serve while hot. Makes 6 servings.
