Fast Fix Pineapple Hand Pies
There's so much to love about hand pies - they're quick to prepare, make perfect party food, and are absolutely delicious. These Fast Fix Pineapple Hand Pies are delicious mini fried pies filled with a thick pineapple pie filling. You can make this homemade pie crust, or roll out a store-bought pie crust to make these bite-sized treats. No matter how you choose to make them, we bet you won't be able to just eat one.
Ingredients
- 1 (15-ounce) can crushed pineapple
- 3/4 cup water
- 3/4 cup sugar
- 1 1/2 tablespoon flour
- 1 teaspoon cinnamon
- 2 1/2 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup shortening
- 3/4 cup canned milk
- 1 egg
Instructions
- In a medium saucepan, mix pineapple and water. Heat to near boiling and reduce heat to low. Combine sugar, flour and cinnamon. Slowly mix into pineapple mixture. Remove from heat when thickened.
- For the crust, combine flour, salt and baking powder in medium bowl. Cut in shortening. Mix milk and egg together, add this to flour mixture and mix until dough forms. Roll out crust on floured surface and cut small circles to create pies. Fill half of each circle with pineapple filling, fold the crust over and seal it with a fork. Fry in hot oil over medium heat until brown.
