Filo Tartlets
Ingredients
- 4 sheets filo pastry, each cut into 8 squares
- 2-3 tablespoons olive oil, + 1 for frying
- 1 large onion, chopped
- 3 tablespoons fresh thyme, chopped
- 300 grams Lancashire cheese or Feta cheese, crumbled
Instructions
Yield: 4 servings. Preheat oven to 200 C / 400 F / Gas 6. Brush filo pastry pieces with oil and place 4 pieces, one on top of the next, in 8 cm tins. Saute onion in 1 tablespoon of olive oil for 15-20 minutes until caramelized. Add the thyme and saute for a further 2 minutes. Place the crumbled cheese in a bowl and stir in the onion mixture. Mix well and divide equally between the tartlets. Bake for 15-20 minutes until golden brown. Trim excess pastry and serve immediately. Serve two per person with salad and Mediterranean breads.
