Mashed Potato Doughnuts

Ingredients

  • 1/4 cup melted butter or margarine
  • 1 1/2 cup granulated sugar
  • 1 cup hot mashed potatoes
  • 2 eggs, beaten
  • 4 cup all-purpose flour
  • 5 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 1/2 cup milk
  • powdered sugar for dusting

Instructions

Cream butter and sugar together. Blend in potatoes and eggs. Sift flour, baking powder, salt and nutmeg together. Add dry mix to potato mix, alternately with milk. Chill dough 2 hours. Preheat a deep pot of oil to 360 F. Roll out dough to 1/2 inch thick on floured surface. Cut with doughnut cutter. Fry about 1 minute on each side. Drain on paper towels. Dust with powdered sugar while warm.
