Soesjes
Ingredients
- 50 gram butter
- a pinch of salt
- 1 dl water
- 60 gram all purpose flour, sifted
- 2 eggs
- 100 gram butter
- 150 gram grated cheese
- salt
- pepper
- cayenne pepper
- ground paprika
Instructions
Grease a baking sheet. Preheat the oven to 410=B0 F. In a small saucepan bring the water, butter and salt to a boil. Add the flour and stir it with a wooden spoon until it forms a ball. Remove from the heat and put the dough in a mixing bowl. With an electric mixer stir in the eggs one by one, mixing after each egg until it is blended in completely. After the second egg keep mixing for another 5 min. until the dough is shiny and drops in pieces from the whisk. With two teaspoons make little heaps of dough on the baking sheet about 3 cm apart. Place the baking sheet in the preheated oven and bake the soesjes for about 25 min. DO NOT OPEN THE OVEN THE FIRST 20 MIN. If the soesjes feel light and the creases are slightly coloured they are ready. Let them cool on a rack. In the meantime you can prepare the filling. Stir the butter until it's soft. Mix in the cheese and salt, pepper and paprika to taste. Cut a little opening in the side of the soesjes and fill them. Keep the filled soesjes in the fridge until you serve them, so the butter can stiffen again. If you fill the soesjes with whipped cream you can top them with chocolate glazing to make them even better.
