Banana Caramel Pie
Ingredients
- 1 baked 8" pie shell
- 1/4 cup cold water
- 2 egg yolks
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/4 cup all-purpose flour
- 1/4 tsp salt
- 1 cup boiling water
- 1 Tbsp butter or margarine
- 1/2 tsp vanilla extract
- 3 Or 4 ripe bananas
- 1/2 cup heavy cream
Instructions
In saucepan, mix cold water with egg yolks; stir sugars, flour, and salt. Gradually add boiling water, stirring briskly. Cook, stirring, 3 to 5 min., or until smooth and thick. Add butter and vanilla; cool 5 min., stirring occasionally. Pour into baked pie shell. Refrigerate till serving time. To serve: Slice bananas over filling. Whip cream; spread over all.
