    Blast From The Past Apple Cobbler

    The hallmark of a cobbler is the crumbly, baked topping that sits right on top of the fruit. This classic cobbler recipe is just like the kind mom used to make. With hints of vanilla, brown sugar and cinnamon, it's baked until it's golden brown. It's simply irresistible.

    Ingredients

    • 6 large Granny Smith apples, peeled & sliced
    • 2/3 cup sugar
    • 1 teaspoon cinnamon
    • 1 teaspoon vanilla
    • 1 teaspoon lemon peel
    • 1 teaspoon lemon juice
    • 1/2 teaspoon nutmeg
    • pinch salt
    • 2 tablespoons tapioca flour
    • 2/3 cup white sugar
    • 1/2 cup brown sugar
    • 1/2 cup and 2 tablespoons of flour
    • 2 teaspoons cinnamon
    • 2 sticks cold butter

    Instructions

    1. Preheat oven to 350 degrees F.
       
    2. Combine apples, sugar, cinnamon, vanilla, lemon peel, lemon juice, nutmeg, salt and tapioca in a large bowl.
       
    3. Spray a 9x13" baking dish with non-stick spray and fill with apple mixture.
       
    4. Combine sugars, flour and cinnamon in food processor. Cut in butter until mixture is crumbly.
       
    5. Top cobbler with streusel mix. Bake for 45 minutes. Serve hot.

    And I assume that "lemon peel" means lemon zest? Doesn't anyone ever proof read these recipes?????

    I think the word "flour" shouldn't be behind the word "tapioca"!!

    I am having a tough time finding tapioca flour. Is there a substitute?
