Ingredients
- 3/4 pound pitted cherries or one 12-oz bag frozen cherries
- 2 peaches, peeled and sliced
- 2 tablespoons lemon juice
- 3/4 teaspoon ground cinnamon
- 2 tablespoons quick-cooking tapioca
- 1 teaspoon vanilla extract
- 3/4 cup sugar
- 1 3/4 cup all purpose unbleached flour
- 1 1/2 teaspoon baking powder
- 3/4 teaspoon salt
- 2 tablespoons sugar
- 2 tablespoons reduced-fat margarine
- 2/3 cup non-fat milk
Instructions
- Mix cherries, peaches, lemon juice, cinnamon, tapioca, vanilla and sugar together and place in a nonstick 8-inch-square pan; prepare crust.
- Preheat oven to 425 degrees.
- Stir dry ingredients together; add margarine and mix until it is crumbled.
- Stir in milk until the mixture forms a ball and knead 6 times.
- Roll out to a thickness of 1/2 inch.
- Using a biscuit cutter, cut dough into 8 biscuits.
- Place biscuits over filling and bake about 35 minutes, until golden.
