    Classic Vintage Cobbler

    Ingredients

    • 5 cups peaches (peeled and sliced) or berries
    • 1 cup sugar
    • 3 tablespoons flour
    • 3 tablespoons butter or margarine
    • 2 cups all purpose flour
    • 2 tablespoons sugar
    • 4 teaspoons baking powder
    • 1/2 teaspoon cream of tartar
    • 1/2 teaspoon salt
    • 1/2 cup butter or margarine
    • 1/2 cup buttermilk

    Instructions

    1. Preheat oven to 400 degrees F.
       
    2. Toss the fruit or berries with sugar and pour into a well greased 1 1/2 quart oblong baking dish.
       
    3. Sprinkle about 3 tablespoons of flour over the fruit and dot with butter or margarine. Set aside.
       
    4. Sift together into a bowl flour, sugar, baking powder, salt and cream of tartar.
       
    5. Cut in the butter or margarine with a pastry blender or fork until the mixture resembles coarse meal.
       
    6. Add buttermilk, mix lightly and form dough into ball.
       
    7. Roll the dough out 1/4 inch thick on a floured board.
       
    8. Cover fruit-filled baking dish with the dough, trimming the edges. Cut a vent in the center of the dough, sprinkle extra sugar on top, if desired.
       
    9. Bake about 40 minutes or until crust is golden brown.

    The very first time I've seen a cobbler recipe that sounds like the ones my grandmother made with a crust on top. I'm going to make it. Sure it doesn't matter what fruit or whether it's fresh or frozen or canned.
