Green Tomato Pie
Ingredients
- pastry for double crust 9" pie
- 1 cup sugar
- 2 t nutmeg or cinnamon (or 1 t each)
- 2 T vinegar
- pinch salt
- 1 T flour
- 3 large green tomatos
- 2 T butter
Instructions
Mix together the sugar, vinegar, flour, salt + spices. (It will be slightly moist). Set aside. Wash and peel the tomatoes and slice them very thin into the pie shell about 3/4 full. Put on sugar mixture evenly, dot with butter. Put on top crust and slash to allow steam to escape. Bake at 375 for 20 min, then reduce heat to 325 and cook 45min to 1 hr.
