    Italian Chocolate Chip Pie (cannoli Pie)

    Ingredients

    • 12-oz. container fat-free pot cheese (dry cottage cheese)
    • 2 whole eggs or 1/2 C. thawed no-cholesterol egg white product
    • 1/2 C. white creme de cacao liqueur
    • 1/4 teaspoon bottled orange peel (optional)
    • 2 egg whites separated from fresh whole eggs
    • 1/8 teaspoon salt
    • 12 teaspoons sugar
    • 3 T. miniature chocolate chips
    • ready-to-fill graham cracker crust

    Instructions

    Combine pot cheese, eggs, creme de cacao and optional orange peel in a covered blender and process smooth. Meanwhile, combine the fresh egg whites and salt in a nonplastic mixer bowl and beat stiff with an electric mixer. Add the sugar a little at a time. Gently but thoroughly fold in the cheese mixture, then gently fold in chocolate chips. Spoon into pie shell and bake in a preheated 325 degree oven one hour. Chill before serving. Makes eight servings, about 185 calories each.
