    Lemon Meringue Pie

    Ingredients

    • 2 Tbsp. cornstarch
    • 2-1/2 Tbsp. flour
    • 1 cup sugar
    • 1 cup boiling water
    • 2 Tbsp. butter or margarine
    • 1/4 teaspoon salt
    • 3 egg yolks
    • 1/3 cup lemon juice

    Instructions

    Mix cornstarch, sugar, flour and salt, stir in boiling water gradually. Add butter. Cook slowly until thick and clear; about 30 minutes. Remove from heat; beat in lemon juice. Beat in egg yolks 1 at a time. Cook 2 or 3 minutes longer, stirring constantly. Pour into baked pie shell. Cover with meringue; brown in 300 degree oven for 30 minutes. This recipe can be doubled or tripled if you want to make more than 1 pie.
