Lemon Tart Filling

Ingredients
- 2 egg yolks
- small piece butter
- juice of large lemon
- 1 dessertspoon cornflour
- 1 cup sugar
- 1 teaspoon grated lemon rind
- 1 heaped dessertspoon full custard powder.
Instructions
- Mix all ingredients and stir in 1 cup of boiling water, and keep stirring on stove until thick (use a wooden spoon).
- When cool spread in pastry case. Beat egg whites with a pinch of salt and cream of tartar, add little sugar spread on top. Brown lightly in oven.
