Magnolia Pie

Ingredients

  • 4 eggs
  • 3 large pkgs. cream cheese (softened)
  • 1 1/3 cup sugar
  • Rind and juice of two lemons (chop rind very fine)
  • 2 pie crusts (either crumb crust or regular pie crusts)
  • 6 tablespoons sugar
  • 1 pint sour cream

Instructions

Beat eggs well. Beat in softened cream cheese and sugar. Blend until smooth. Add rind and juice of one lemon. Pour into the pie crusts. Bake at 325-350 degrees for about 25 minutes. While they are baking, combine rest of sugar and juice of other lemon with the sour cream with as little motion as possible. Return mixture to refrigerator. Remove pies from oven and allow to cool slightly. Spread sour cream mixture on top of pies and return to oven for 5 minutes. Refrigerate overnight.
