Never Fail Sweet Potato Pie

For Coconut Sweet Potato Pie, prepare same as above, adding 1/2 to 3/4 cup coconut, to taste.

Ingredients
- 3/4 cup butter
- 2 1/4 cup sugar
- 6 eggs, beaten
- 1 can (40 oz.) Princella or Sugary Sam Cut Sweet Potatoes, drained and mashed
- 1 tablespoon cinnamon
- 6 tablespoon cornstarch
- 15 ounce evaporated milk
- 3 teaspoon vanilla
- 1/2 teaspoon salt
- 3 pie shells (9-inch), unbaked

Preheat oven to 400 degrees F.

Cream butter and sugar together. Add eggs and stir.

Add sweet potatoes and mix well. Add cinnamon and corn starch.

Stir in milk, vanilla and salt, making sure all ingredients are thoroughly mixed.

Pour into pie shell and bake 15 minutes. Lower heat to 350 degrees F. Cook until knife comes out clean (20-30 minutes).
