Quick and Creamy Lemon Meringue Pie

Ingredients
- 1 1/2 cup graham cracker crumbs
- 1/4 cup Butter
- 3 tablespoon granulated sugar
- 1/4 cup egg yolks
- 14 ounce sweetened condensed milk
- 1/2 cup lemon juice
- 1/4 cup egg whites, slightly beaten
- 1/4 teaspoon cream of tartar
- 1/3 cup granulated sugar
Instructions
- Preheat oven to 350 degrees F.
- To prepare crust, combine crumbs, margarine, and sugar in a mixing bowl.
- Press mixture firmly in a 9" pie pan. Bake for ten minutes or until lightly brown.
- To prepare filling, combine egg yolks, sweetened condensed milk, and lemon juice in a mixing bowl. Mix well. Pour into crust.
- To prepare meringue, beat egg whites in a mixing bowl until large bubbles form.
- Beat in cream of tartar and continue beating until soft peaks form.
- Gradually add sugar, beating until meringue is smooth and glossy and stands in soft peaks. Spread meringue over top pie filling.
- Bake for 15 minutes, or until meringue is golden brown. Cool completely, then refrigerate until ready to serve.
