    Tapioca Peach Cobbler

    Tapioca peach cobbler is an interesting recipe that uses all of the standard peach cobbler ingredients including peaches, sugar and butter, but also implements quick-cook tapioca and baking powder biscuits for an all-over great tasting peach cobbler recipe.

    Ingredients

    • 3 tablespoons quick-cooking tapioca
    • 1/2 cup sugar
    • 2 tablespoons melted butter
    • 3 cups fresh, sliced peaches
    • 3/4 cup water
    • baking powder biscuits (recipe included)

    Instructions

    1. Combine tapioca, sugar, butter, peaches and water.
       
    2. Turn dough out on lightly floured board, knead dough slightly; roll 2/3 of dough into a rectangle 1/4 inch thick; cut into 2 - inch strips and line sides of 8 x 8 x 2 inch pan, fitting dough closely into corners.
       
    3. Fill with peach mixture and roll remaining 1/3 dough 1/4 inch thick; with sharp knife make slits to permit steam to escape.
       
    4. Fit over peaches, pressing edges of dough together with fork dipped in flour.
       
    5. Bake in hot oven 450 for 15 minutes; then reduce heat to moderate 350F and bake 25 minutes longer.
       
    6. Sprinkle powdered suger over top.
       

    For baking powder Biscuits:

    • 2 cups sifted flour
    • 3 tsp. baking powder
    • 1/2 tsp. salt
    • 1/4 cup shortening
    • 3/4 cup milk

     

    Directions:

    1. Mix and sift dry ingredients.
       
    2. Cut in shortening until well mixed and add milk, stirring quickly until a soft but not sticky dough is formed.
