Yogurt Jell-O Pie

If you use prepared pie shells, they may come with a lid, which allows you to stack several pies inside your freezer compartment. Simply double or triple the recipe above to make several pies ahead and freeze them. It takes 30 to 45 minutes for a pie to thaw. Freeze them only about a week in advance.

Ingredients
- 1 (3-ounce) package fruit-flavored Jell-O
- 1/2 cup boiling water
- 2 (8-ounce) containers fruit-flavored yogurt, stirred
- 1 (12-ounce) tub Cool Whip, thawed
- 1 (8-inch) graham cracker pie shell
Instructions
- Dissolve Jell-O in boiling water in a large mixing bowl.
- Add yogurt to Jell-O and stir until creamy and smooth.
- Be sure to let the mixture cool completely before adding the Cool Whip, or the Cool Whip will lose its fluff. Fold the Cool Whip into the yogurt mixture just until the whipped topping is the same color or marbled into the mixture.
- Spoon filling into graham cracker crust immediately. The filling will set up very quickly. Do not stir too much, as this will also cause the Cool Whip to lose its fluff.
- Freeze until 45 minutes before serving. Thaw and serve.
