Mediterranean Chicken Pizza

Ingredients

  • 2 pizza crusts (bought or home made)
  • 5 thinly sliced roma tomatoes
  • 4 cup shredded mozzarella cheese
  • 1 jar marinated artichoke hearts
  • 8-12 sliced fresh mushrooms
  • 1 can sliced black olives
  • 3 boneless skinless chicken breasts
  • 2 cloves garlic--pressed
  • 1 teaspoon greek seasoning (Cavenders)
  • 1/4 teaspoon ground red pepper
  • 2 teaspoon balsamic vinegar
  • 2 Tbs. olive oil

Instructions

Cube (small) chicken breasts and saute in olive oil until opaque. Add garlic, seasoning, and red pepper. Saute 1-2 minutes more. Add vinegar and saute until absorbed. Remove from heat and cool. Place tomatoes on crusts layering in a circle. Spread 1 cup of cheese on each. Place mushrooms on crusts. Slice artichoke hearts and sprinkle on both crusts. Place chicken on pizzas next, then sprinkle the rest of the cheese on top. Finish off with the sliced black olives. Brushing the crust with the artichoke marinade also gives it a nice flavor. Bake on a pizza stone in a preheated 400 degree oven until golden brown and bubbly all over (20 minutes for pre baked crust).
