Crepes Nalesniki

Ingredients

  • 1 egg
  • 1 egg yolk
  • 1 1/2 cup of milk
  • 2 cups of flour
  • oil for frying
  • 1 cup curd cheese
  • 1 Tbs. butter
  • 1 egg yolk
  • 1 teaspoon superfine sugar

Instructions

Whisk the egg and egg yolk together. Pour in half the milk and whisk again. Mix the flour and the remaining milk. Beat well until batter is smooth. Add a pinch of salt. Leave it for 5 minutes. Heat oil in a pan, pour a little of the batter onto it. Tilt the pan so that the batter runs to fill it and forms a very thin pancake. When browned, turn on the other side. Fill the pancakes with cheese, roll them, or fold into quarters and serve warm. For the filling: press curd cheese through a sieve. Cream butter with egg yolk and mix with the cheese. Add sugar.

Directions are a bit confusing. Do I mix this in two bowls? One? I did it in two bowls and had a mess going until I whipped out my mixer. The batter finally came out the right consistency, but it was heck trying to get a 5 minute thing after about 20 minutes. We were STARVING! I just filled them with pie filling and either sprinkled with powdered sugar or dumped some sour cream on top. Yummy once they were done.
