    Fresh Easter Cheese

    Ingredients

    • 1 quart milk
    • 1 dozen eggs
    • 1/2 cup sugar
    • 1tsp salt
    • 1 tsp vanilla

    Instructions

    Beat eggs, sugar, milk salt and vanilla very well. Cook in double boiler stirring constantly so mixture won't scorch. Cook until mixture resembles scrambled eggs. Place three layers of cheesecloth over a sieve and pour mixture into cloth. Shape into a ball and tie tight with a string. Hang in a cool place overnight where the moisture can drip from the cheese. Gently remove from cheesecloth slice and serve. Optional: After removing from cheesecloth brush with beaten egg and put under broiler til golden brown, then cool in refigerator and serve cold.
