Plum Cake
Ingredients
- 1 c milk
- 1/4 c butter
- 1/4 c sugar
- 1 tsp salt
- 1 package yeast
- 1/2 c lukewarm water
- 1 beaten egg
- 4 c flour
Instructions
Scald milk; add butter, sugar, and salt; cool to lukewarm. Add yeast dissolved in water; add egg. Gradually stir in flour to form soft dough. Beat well; cover and let rise in warm place about 2 hours. Turn out onto floured board and knead a little. Gently stretch dough to fit 9" square cake pan. Let rise a little more. When dough has risen, take fresh plums (preferably Italian prune plums), washed, halved and pitted, and press into dough cut side up. (The better you press them into the dough, the more of the plum juice seeps into the dough... which is great!) Sprinkle a mixture of brown sugar, white sugar, and cinnamon over the top. Let dough rest for a little longer. Bake in a preheated 350F oven for 35 minutes, or until golden brown and puffy. Serve warm, with coffee or cold milk.
