Zachidki Soup
Ingredients
- 2 quart water
- 4 small potatoes
- 1/2 small onion, finely diced (or 1 leek for milder taste)
- 1 tablespoon butter
- 3/4 qt. buttermilk
- 1 batch kluskis
- salt/pepper to taste
Instructions
Cut potatoes into small to medium size pieces and bring them to a boil in approximately 2 quarts of salted water. Once potatoes are cooked (don't let them get mushy), drain them and put aside. Do not discard the potato water. Saute the onion (or leeks) in tablespoon of butter until translucent. Add to the potato water (soup base). Bring the potato water to a simmer and then turn off heat. Add buttermilk. Stir in potatoes and kluskis. Season with salt and pepper, heat (but do not boil) and enjoy! KLUSKIS 2-3 small potatoes 1-2 eggs 1/2 small onion flour salt and pepper Grate the potatoes and onion together. Once grated, add egg(s) and mix. Add salt and pepper and begin adding enough flour until mixture is thick. Then, using a teaspoon slowly drop small amounts of potato mixture into boiling water. Take the kluskis out of the water when they rise to the surface. These are now ready to be used in the zachidki soup.
