Zur / White Borsch
Ingredients
- Mix coarsely ground rye and water in a stoneware crock to which
- you add some sugar and salt, and some garlic. On top of this, place
- a piece of rye bread which would assist in the fermenting process.
- Cover with piece of cloth, and place in a warm area.
Instructions
To make soup: boil a pot of water, add a cup of the fermented zur and whatever is available, such as mushrooms, chopped onions, and a pinch of herbs. Pour it over the plain, boiled potatoes.
