Crisp and Cozy Pork Chop Pan Dinner

This Crisp and Cozy Pork Chop Pan Dinner is a great way to bring the essence of autumn into your home. Because the whole meal bakes together on one pan, the flavors and aromas blend together in the process, making this a most delicious and comforting meal. Roasted apples, pearl onions, and thyme are the other main components in this dish and combined, they bring about a sense of the season, while also bringing juicy, tender flavor and crunchy, crisp texture to your plate. Serve this on a chilly fall night, and your family won't leave the table till every bite is gone.

Cooking Vessel Size18x13-inch, rimmed sheet pan, lined with foil and sprayed with nonstick cooking spray

Ingredients

  • 4 bone-in center-cut pork loin chops
  • 3 tablespoon olive oil, divided
  • 2 teaspoon minced fresh thyme leaves
  • Salt and freshly ground black pepper
  • 2 large tart-sweet apples (such as Braeburn or Gala), each cut into 
8 wedges and cores removed
  • 2 cup frozen pearl onions, thawed

Instructions

  1. Preheat oven to 475 degrees F.

  2. Place pork chops on prepared pan. Drizzle with 2 tbsp (30 mL) oil, sprinkle with thyme and season generously with salt and pepper. Rub seasoning all over pork, turning to coat. Arrange evenly spaced on pan. Roast in preheated oven for 12 minutes.

  3. Meanwhile, in a medium bowl, toss together apples, onions and the remaining oil. Season to taste with salt and pepper.
     

  4. Remove pan from oven and turn pork chops over. Arrange apples and onions around chops. Roast for 12 to 15 minutes or until apples are tender and an instant-read thermometer inserted in the thickest part of the pork, without touching the bone, registers 145°F (63°C) for medium-rare.

Variations

  1. For chops that have less browning, line the sheet pan with parchment paper and roast at 400°F (200°C) for 15 minutes in step 1 and 20 to 25 minutes in step 3.
     

  2. Replace the apples with 3 firm-ripe pears, each cut into quarters and cores removed.
