Bacon Wrapped Pork Loin with Herbed Goat Cheese Spinach Mushrooms

"I scream, you all scream, we all scream for…stuffed pork loin! A versatile and forgiving dish that can pretty much be stuffed with anything you like. I chose a bacon wrapped pork loin stuffed with herbed goat cheese, spinach, & mushroom stuffed pork loin. This is the very first time that I have tried it wrapped in bacon, and the results were amazing! This is perfect roasted with some fresh vegetables. A stunning family dinner!"

Ingredients

  • 3 pound Pork Loin
  • 1 pound Bacon
  • 4 ounce Spinach
  • 8 ounce Mushrooms
  • 8 ounce Goat Cheese
  • 3 Shallots
  • 3 clove Garlic
  1. Cut pork loin to lay flat.

  2. Saute spinach, mushrooms, shallots, and garlic.

  3. Add goat cheese. Layer vegetable mixture on top.

  4. Roll pork loin, and wrap in bacon.

  5. Bake at 400-degrees for about an hour.

  6. Rest for ten minutes and serve.
