Baked Pork Chops and Macaroni Creole

Ingredients
- 4 thin shoulder pork chops
- 1 tablespoon salad oil
- 1 cup onions, sliced
- 1 clove garlic, crushed
- 1 pound canned whole tomatoes (undrained)
- 1/2 teaspoon thyme, dried
- 1 bay leaf, crumbled
- 3/4 teaspoon salt, or to taste
- 1/8 teaspoon pepper, ground
- 2 cup cooked elbow macaroni
Instructions
- Wipe pork chops with damp paper towel, trim excess fat.
- Place on rack in broiler pan, broil on both sides until nicely browned.
- Preheat oven to 350 degrees F.
- In hot oil in a large, ovenproof skillet, sauté the onion and garlic, stirring occasionally, until tender, about 5 minutes.
- Add tomatoes, thyme, bay leaf, salt, and pepper and mix well.
- Add cooked macaroni to tomato mixture, mix well.
- Arrange chops on top and bake, covered, for 40 minutes or until chops are tender.
