Pork Chops & Linguica

Ingredients

  • 6 center cut pork chops
  • 11/2 lbs linguica
  • 3 large potatoes, cut in half
  • 1 large onion, sliced
  • 1 jar basil and garlic tomato sauce
  • salt and pepper to taste

Instructions

Parboil potatoes 10 minutes. Brown all pork chops well. Slice up onion and chill. Slice linguica into 1/8 inch slices and set aside. Arrange potato on bottom of baking dish and add in a small amount of onion and linguica. Arrange pork chops on top of potato. Distribute linguica on top of pork chops along with the remainder of onion. Season lightly with salt and pepper. Pour tomato sauce over all. cover with foil and bake at about 350 for 45 minutes. Uncover and continue baking for about another 10 to 15 minutes.
