Beet and Potato Salad

My momma always said that her beet and potato salad was the best potato salad recipe around, and everyone says she's right! As delicious potato salads go, this one ranks right up there.

Ingredients

  • 4 beets, topped and tailed
  • beet tops, sliced, steamed and drained
  • 3 medium white potatoes
  • 6 garlic cloves, minced
  • 3 tablespoon olive oil
  • juice of 1 lemon
  • pepper, to taste

Instructions

  1. Simmer beets until tender. Drain, and cool. When cooled, slip off skins.
     
  2. Cook potatoes in jackets until tender when poked with a fork. Drain, cool, and peel.
     
  3. Cube beets and potatoes and place in bowl with greens.
     
  4. Whisk garlic with oil and lemon juice. Season dressing to taste, then toss with beets and potatoes.
     
  5. Serve chilled with crusty bread.
