Cilantro Pesto Potato Salad

Ingredients

  • 1 tbsp garlic
  • 1 bunch cilantro
  • juice of 1/2 lemon
  • 2/3 cup oil
  • 1 cup pistachio nuts
  • salt
  • pepper
  • 1 pound potatoes, boiled, cooled and diced
  • 1/2 cup Parmesan cheese, grated

Instructions

Combine garlic, cilantro, lemon juice, oil, nuts, salt and pepper thoroughly. Mix potatoes with Parmesan cheese and 1 cup of the cilantro pesto. Serve at room temperature.
