Potato Salad with Beer Dressing

Ingredients

  • 6 potatoes
  • 1 tbs vinegar
  • 2 tbs olive oil
  • salt and pepper
  • 1 small onion finely chopped
  • 1/2 cup finely chopped celery
  • Beer Dressing
  • 1 cup milk
  • 1 tbs margarine or butter
  • 3 tbs cornstarch
  • 3 tbs water
  • 2 tsp dry mustard
  • 1 tsp salt
  • 1/2 cup cold beer

Instructions

Cook potatoes by your favorite method. Peel and dice when warm enough to hand. Mix the vinegar, oil, salt and pepper to make a marinade. Mix into potatoes with onion and celery. cool mixture. Heat milk and butter. Mix cornstarch with cold water to make a paste. Add to milk mixture with seasonings and cook and stir till thick.Add beer slowly and stir smooth. Divide potato mixture on lettuce lined plates. Top with the beer sauce. Serves about 6
