Authentic Beef Jerky

Ingredients

  • 5 pounds lean beef
  • 5 tablespoons Morton tender quick
  • 5 teaspoons sugar
  • 1 tablespoon black pepper
  • 5 teaspoons garlic powder
  • 1 teaspoon red pepper
  • 1 teaspoon accent
  • 1/4 teaspoon marjoram
  • 1/2 teaspoon cardamom
  • 1 ounce liquid smoke mixed with 1 oz water

Instructions

  1. Coarse grind lean meat. Add all dry ingredients. Mix until combined. Add liquid smoke/water to meat and mix thoroughly.
     
  2. Roll into golf ball sized balls. Sandwich between two layers of wax paper. Press down to about 1/2-inch or less. Sometimes the meat sticks to the way paper at first, but usually gets better as you go on.
     
  3. Put in dehydrator or oven at 145 degrees F for 6 - 12 hours for desired texture.
