Monastery Herbal Sausage
Ingredients
- 400 grams lean pork
- 400 grams lean beef
- 200 grams green pork back fat or fatty Pork belly without skin
- 20 grams salt
- 2 level tsps finely ground white pepper
- 1 ts thyme
- 1 ts marjoram
- 5 pieces pimento
- 1 piece finely ground cinnamon
Instructions
Mince pork, beef and fat through 8mm disc. Mix herbs and spices and sprinkle over meat mass and mix all together by hand for 5-10 minutes. Fit funnel to mixer and fill pork casings.
