Monastery Herbal Sausage

Ingredients

  • 400 gram lean pork
  • 400 gram lean beef
  • 200 gram green pork back fat or fatty Pork belly without skin
  • 20 gram salt
  • 2 level tsps finely ground white pepper
  • 1 ts thyme
  • 1 ts marjoram
  • 5 pieces pimento
  • 1 piece finely ground cinnamon

Instructions

Mince pork, beef and fat through 8mm disc. Mix herbs and spices and sprinkle over meat mass and mix all together by hand for 5-10 minutes. Fit funnel to mixer and fill pork casings.
