Old Style Head Cheese
Ingredients
- 1/2 tjte de porc / 1/2 pig's head
- 2 oignons tranchis / 2 onions, sliced
- 3 branches de cileri / 3 stalks of celery
- sel et poivre / salt and pepper
Instructions
Placez dans un grand chaudron 1/2 tjte de porc. Ajoutez 2 oignons tranchis, 3 branches de cileri Cuisez pendant 1 1/2 a 2 heures. Retirez la tjte du bouillon et enlevez la viande. Passez cette viande au hachoir. Coulez le bouillon et versez sur la viande. Assaisonnez au got et remettez au feux jusque ibullition. Versez ensuite dans des petits plats (qui auront iti rincis auparavant dans l'eau froide) et rifrigirez. Translation is my own so forgive and mistakes In large pot cook the head with the onion and celeri for 1 1/2 to 2 hours. Remove the head and take meat off the piece. Run the meat through a food processor. Drain the drippings onto the meat. Add salt and pepper to taste and heat to boiling. Pour into small containers that have been rinced in cold water and have been refrigerated.
