Pickled Herring

Ingredients

  • 3 quarts cold water
  • 2 salt herring, cleaned and cut into 3 inch pieces, head and tail removed,
  • and boned if desired or two Schmaltz herring
  • 2 onions, cut in half and sliced thin
  • 1 Tbsp. vegetable oil
  • 1 cup water
  • 1 cup white vinegar or cider vinegar
  • 1 pinch sugar up to 1/2 tsp.

Instructions

Soak herring 24 hours changing water several times. Drain and rinse. Layer herring and onions in a bowl with a cover. Mix remaining ingredients and pour over herring and onions. Cover and chill for two days.
