    Apple Ginger Jam

    Ingredients

    • 1 small orange
    • 2 small limes
    • 1 1/2 pound Granny Smith apples
    • 1 1/2 pound fresh young ginger
    • 1 1/4 c water
    • 3 1/2 c sugar

    Instructions

    Seed unpeeled orange and limes; finely chop. Pare apples and core; pare ginger. Coarsely chop apples and ginger. In a large saucepot bring orange, limes, apples, ginger and water to a boil; simmer, covered, until tender (about 40 minutes). Add sugar and stir until dissolved. Bring to a boil and boil gently, uncovered, stirring often toward end of cooking, until thick (about 1 hour). Store in freezer. Makes about 10 cups.
