Apple Chutney
Ingredients
- 3 pounds apples
- 1/2 pound sultana raisins
- 1 tsp garlic, finely chopped
- 1/2 ounce mustard seed
- 1/2 ounce ground ginger
- 1 pint malt vinegar
- salt
- cayenne pepper
Instructions
Slice apples rather thickly and let them simmer in the vinegar and sugar until reduced to a pulp - stir often. Add rest of ingredients and mix thoroughly. Turn mixture into a basin keeping it well covered but stirring 2 or 3 times daily for one week, then put in sterilized sealers. Boiling water bath if desired. Will keep for years.
