Blueberry Syrup
Ingredients
- Crush 2 quarts blueberries, combine with 2 cups water and 1 tablespoon
- grated lemon peal. Simmer 5 minutes, then strain through damp
- jelly bag or several layers of damp cheesecloth. Combine 3 cups
- sugar with 4 cups water and boil to 260 degrees. Add blueberry
- juice to sugar syrup, boil 1 minute, add 2 tablespoons lemon juice.
- Ladle into hot jars leaving 1/4 inch headspace. Process 10 minutes
- in BWB. Yields about 3 pints.
