    Blueberry Syrup

    Ingredients

    • Crush 2 quarts blueberries, combine with 2 cups water and 1 tablespoon
    • grated lemon peal. Simmer 5 minutes, then strain through damp
    • jelly bag or several layers of damp cheesecloth. Combine 3 cups
    • sugar with 4 cups water and boil to 260 degrees. Add blueberry
    • juice to sugar syrup, boil 1 minute, add 2 tablespoons lemon juice.
    • Ladle into hot jars leaving 1/4 inch headspace. Process 10 minutes
    • in BWB. Yields about 3 pints.
