Chili Corn Relish
Ingredients
- 20 med-size ears of corn, husks & silk removed
- 1 cup diced green bell pepper
- 1 cup red bell pepper
- 1 cup yellow bell pepper
- 1 cup diced onion
- 1 cup diced celery
- 1 tbs salt
- 1 1/2 cup sugar
- 1 tsp celery seed
- 1/2 tsp turmeric
- 2 tbs chili powder
- 3 garlic gloves, minced
- 2 1/2 cups distilled white vinegar
Instructions
Carefully cut kernels from cob (do not scrape cobs). In a large kettle, combine corn and remaining ingredients. Boil gently, uncovered, 15 minutes. Ladle into hot jars, leaving 1/4 inch headspace. Process 15 minutes in bwb.
