Chili Corn Relish
Ingredients
- 30 med-size ears of corn, husks & silk removed
- 1 1/2 cup diced green bell pepper
- 1 1/2 cup red bell pepper
- 1 1/2 cup diced onion
- 1 .5 cup diced celery
- 4 1/2 tsps salt
- 2 1/4 cups sugar
- 1 1/2 tsp celery seed
- 3/4 tsp turmeric
- 6 tbs chili powder
- 2 Tbs crushed red pepper
- 6 garlic gloves, minced
- 5 cups distilled white vinegar
Instructions
Carefully cut kernels from cob (do not scrape cobs). In a large kettle, combine corn and remaining ingredients. Boil gently, uncovered, 15 minutes. Ladle into hot jars, leaving 1/4 inch head space. Process 15 minutes in bwb. Yield is about 15 pint jars using medium large ears of corn.
