    Chili Corn Relish

    Ingredients

    • 30 med-size ears of corn, husks & silk removed
    • 1 1/2 cup diced green bell pepper
    • 1 1/2 cup red bell pepper
    • 1 1/2 cup diced onion
    • 1 .5 cup diced celery
    • 4 1/2 tsps salt
    • 2 1/4 cups sugar
    • 1 1/2 tsp celery seed
    • 3/4 tsp turmeric
    • 6 tbs chili powder
    • 2 Tbs crushed red pepper
    • 6 garlic gloves, minced
    • 5 cups distilled white vinegar

    Instructions

    Carefully cut kernels from cob (do not scrape cobs). In a large kettle, combine corn and remaining ingredients. Boil gently, uncovered, 15 minutes. Ladle into hot jars, leaving 1/4 inch head space. Process 15 minutes in bwb. Yield is about 15 pint jars using medium large ears of corn.
