Cranberry Banana Jam

Ingredients

  • 12 ounce (3 3/4 cups)fresh cranberries, chopped
  • 1 1/2 cup water
  • 7 cup sugar
  • 2 cup mashed bananas
  • 3-oz. package liquid fruit pectin

Instructions

Combine cranberries and water in a 5 quart dutch oven or large kettle. Simmer, covered, for 10 minutes. Stir in sugar and banana. Bring to a hard boil; boil 1 minute. Remove from hea t. Stir in pectin. Skim off foam. Spoon mixture at once into hot sterilized 1/2 pint jars, leaving 1/4 inch head space. Wipe jar rims; adjust lids and rings. Process in a boiling water bath for 5 minutes. (Start timing when the water boils) Approximate yield: 8 half-pints.
