Creme de Menthe Pears

Ingredients

  • 5 pound pears (about 10 large)
  • 3 cup sugar
  • 4 cup water
  • 3 drops green food coloring
  • 1 tablespoon fruit protector
  • 1 1/2 cup creme de menthe

Instructions

Peel, core and halve pears. Bring sugar, water, food coloring, and fruit protector to the boil. Add creme de menthe and stir well. Add pears and simmer covered over low heat 3 to 5 minutes, just to heat pears through. Put the pears, cut side down, into hot jars, and pack. Fill with hot cooking liquid. Release air bubbles and clean rims. Process pint jars for 20 minutes in a BWB. Makes 5 pints.
