Crisp Cabbage Relish
Ingredients
- 3/4 cup sugar
- 1/2 cup distilled white vinegar
- 1 1/2 teaspoon salt
- 1 tsp celery seed
- 3/4 tsp pepper
- 1 2 1/2 - pound cabbage, cored, quartered, thinly sliced
- 4 large carrots, peeled, grated
- 2 large celery stalks, chopped
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
Instructions
Combine sugar, vinegar, salt, celery seed, and pepper in a large glass bowl; stir until sugar dissolves. Add cabbage, carrots, celery, red bell pepper, and yellow bell pepper; toss to blend. Cover relish and refrigerate at least 4 hours, tossing occasionally. (Can be prepared 1 week ahead)
