Green Tomato Salsa

Ingredients

  • 10 c. green tomatoes, cut into chunks
  • 1 c. celery, chopped
  • 4 c. bell peppers, chopped
  • 3 small handfuls dehydrated onions
  • 2 1/2 c. fresh chopped onions
  • 2 (7 oz.) cans green chiles, chopped
  • 2 1/4 teaspoon heaped ground garlic
  • 2 teaspoon salt, heaping
  • 3 c. cider vinegar
  • 14 shakes Tabasco sauce

Instructions

Boil (good rolling boil) for 20 minutes or put in pressure cooker at 5 pounds pressure. Then take off burner and let pressure go down. Check for taste and seasoning to desired level before canning in pint jars.
