    Gooseberry Jam

    Ingredients

    • 2 1/4 lbs. gooseberries
    • 3 pounds sugar
    • 30-40 oz water (3/4 to 1 pt. British Imperial)

    Instructions

    Top, tail and wash the berries. Put in a pan with the water. simmer gently until the fruit is soft (this may take 1/2 hr. or longer.) Then add the sugar and stir over a low heat until dissolved. Bring to the boil and boil rapidly until setting point is reached. (remove from the heat after 10 minutes rapid boiling to test for the set.) Skim, pour into dry, warm jars and cover.
