Green Tomato Chutney
Ingredients
- 1 seeded, chopped lemon
- 1 skinned, chopped clove garlic
- 5 cups firm, chopped green tomatoes
- 2 1/2 cups brown sugar
- 1 1/2 cup raisins
- 3/4 cup chopped fresh ginger root, or 3 oz. crystallized ginger
- 1 1/2 teaspoon salt
- 1/4 teaspoon cayenne
- 2 cups cider vinegar
- 2 chopped hot red peppers (optional)
Instructions
Put all ingredients in a saucepan and simmer until the fruit is tender. Pour into jars and seal. This will keep in the refrigerator for a couple of months. For longer storage, put into half pint jars and process in a boiling water bath for 15 min.
