Jamaican Mango Chutney
Ingredients
- 4 cups under ripe mangoes, diced
- 1 cup raisins
- 1 cup dates,diced
- 4 ounces green ginger,fine diced & crushed
- 1 teaspoon mustard seed
- 4 cups sugar
- 2 ounces salt
- 2 cloves garlic, minced
- 2 hot peppers, minced
- 4 cups malt vinegar
- 1/2 pound onions, chopped
Instructions
Cut up dried fruit and peppers, add to vinegar and allow to steep until the next day. Add sugar to diced mangoes, along with ginger, garlic, onions and other seasonings. Boil all ingredients together gently until chutney is thick and brown.
