Jarred Apple Pie Filling

Ingredients
- 4 1/2 cup granulated sugar
- 1 cup cornstarch
- 2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon salt
- 10 cup water
- 3 tablespoon lemon juice
- 24 cup apples, peeled, cored and sliced (about 6 pounds)
Instructions
- In a large pot, combine the sugar, cornstarch, cinnamon, and nutmeg. Stir to combine. Add salt and stir in the water. Cook mixture until clear, thick, and bubbling. Stir constantly.
- Add raw apples to sugar syrup and heat through. Add lemon juice. Cook until apples are tender.
- Pack apples in clean glass jars, leaving 1 inch of space.
- To seal your jars, place them in boiling water bath for 15 minutes (20 minutes for quart-sized jars).
